“McDonald’s” Breakfast Burritos


THE PERFECT BREAKFAST!!!! Fast, tasty, and cheap! These burritos are made to be frozen then reheated in the microwave as needed. I’ve made these for friends a lot over the years and heard “these are just like McDonald’s!” more than a handful of times!
Here’s what you’ll need:

Sausage, eggs, cheese, red pepper, jalapeno, onion, milk, salt, pepper and tortillas.
First chop all of your vegetables. Next, squeeze the sausage out of the casings and chop it up.

Add a little olive oil to a large sauté pan over medium high heat. After a minute or two, add the sausage and vegetables. Sauté, stirring often, for about 8-10 minutes or until sausage is cooked through and veggies are soft.

While the sausage and veggies are cooking, crack 12 eggs into a large bowl and add salt, pepper and milk. Sometime I throw in a little tabasco to spice things up! Whisk until well blended.

When the sausage and veggies are ready, add the egg mixture and turn the heat down to medium. Use a rubber spatula to stir constantly as the egg cooks. When the egg is cooked through (about 7-8 minutes) remove the mixture from the heat to let cool.

Warm 10 tortillas in the microwave for 1 minute. Now you’re ready to assemble! Place half of a slice of cheese in the center of a tortilla. Top with 1/3 cup of the egg mixture. Fold one side of the tortilla over the filling then fold in both edges. Roll the burrito over onto the other side of the tortilla and slightly press down so the folds stay in place.

Way to go!! Now repeat with the remaining tortillas. Let the burritos cool then store them in the freezer in gallon sized Ziploc bags.

When ready to eat, put one or two frozen burritos in the microwave for 1. 5 or 2 minutes, until heated through. If you’re serving a crowd, put all 20 frozen burritos on a cookie sheet or lasagna pan and heat in 300 degree oven for about 30 minutes. Flip the burritos half way through.

  • 1 lb. breakfast sausage links (raw)
  • 12 eggs
  • 10 slices American cheese
  • 1 red pepper, chopped
  • 1 onion, chopped
  • 2 jalapenos, seeded and chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup milk
  • 20 fajita sized tortillas


  1. Chop the onion, pepper and jalapenos.
  2. Squeeze the sausage out of the casings and chop into small pieces.
  3. Heat 2 tablespoon of olive oil over medium high heat in a large saute pan.
  4. Add the vegetables and sausage.
  5. Cook 8-10 minutes, stirring often, until sausage is cooked through and vegetables are soft.
  6. Crack the eggs into a bowl and add the salt, pepper and milk. Whisk until blended.
  7. Add the egg mixture to the sausage mixture and turn the heat down to medium.
  8. Stir constantly until the egg is cooked through.
  9. Warm the tortillas in the microwave for one minutes.
  10. Place a half of a slice of cheese on a tortilla.
  11. Put 1/3 cup of the egg mixture on top of the cheese.
  12. Fold one side of the tortilla over the egg mixture. Fold up the edges and roll the burrito over the rest of the way. Press down slightly so burrito holds its shape.
  13. Let burritos cool then put them in gallon sized ziplock bags and freeze.
  14. Warm one or two burritos in the microwave for 1 1/2 to 2 minutes.

I have a tradition of eating McDonald’s breakfast burritos on my birthday every year, and I’ve been doing that since I was 6, almost 20 years now. I have been searching for a recipe that could get those flavors right, and this is it! You have made me so happy! Thanks again!
