BLT Bites


Everybody loves bacon.  What’s not to like?!  It’s, greasy, salty, and all around delicious.  One of my very favorite summer meals is a BLT with fresh tomatoes from the Farmer’s market and crispy hot bacon.  These little treats transform that meal into a bite-sized party pleaser!  These are the perfect snack to take to the pool, lake or BBQ this summer!  WARNING….THEY WILL GO FAST!

Here’s what you need:

Cherry tomatoes, bacon, cream cheese, parmesan cheese, mayo, and green onions.

Start by frying up your bacon.  There are all kinds of suggestions online to avoid actually frying the bacon….bake it in the oven, buy pre-cooked, etc.  I prefer doing it the old fashioned way on the stovetop and having my apartment smell like bacon for a few days.  Just chop it up, throw it in a frying pan on medium high and watch it do its thing!

Be sure to stir it around frequently.   When it’s good and crispy, let it drain on paper towels.

Next, hollow out your tomatoes.  I use Flavorino tomatoes.  They started popping up in Kansas City grocery stores 2 summers ago and they’re PERFECT for this recipe.  They’re super red and sweet and just the right size.

I cut them in half then use a paring knife to scoop out the seeds.  Drain them on a paper towel while you move on to your filling.  (Guess I should have mentioned you’re going to need paper towels as well!)



In a large bowl, mix the cream cheese and mayo.


Add the bacon.

Add the Parmesan cheese. Chop up the green onions using both the white and green parts and stir them in until well blended.


Now you’re ready to fill them up!   If you’re not ready to serve them yet, you can store the tomatoes in a large ziplock bag with a paper towel or two to absorb any liquid and just store the filling in a bowl.   When you’re ready to serve them,  just scoop the filling into the tomatoes and set them on a platter.


BLT Bites


  • 3 pkgs Flavorino tomatoes, halved and gutted
  • 1 lb. bacon, chopped and fried
  • 8 oz. cream cheese
  • ½ cup mayo (more if needed)
  • ½ cup parmesan
  • 1 bunch green onions, chopped


  1. Chop and fry bacon. Drain on paper towels.
  2. Cut tomatoes in half and scoop out the pulp and seeds
  3. Mix together the cream cheese, mayo and parmesan.
  4. Chop up the green onions and add them to the cheese mixture.
  5. Fold in the bacon.
  6. Scoop cheese mixture into the tomatoes and serve!
